Overnight Oatmeal
Most days I wake up hungry; the thought of waiting 20 minutes to cook steel cut oats makes me hungrier! This recipe is great because it’s easy. When I wake up all I have to do is heat up the oats and add the spice I’m in the mood for, fruit, nuts and seeds and I have a happy stomach. For overnight oatmeal, I prefer a ratio of 1:3 because I like to add nut milk before serving. 1 portion of steel cut oats to 3 portions of water, adjust the recipe depending on appetite and the number of servings required.

Ingredients
- 1 cup of water
- 1/3 cup steel cut oats
- Your favourite toppings!
Recipe
In a small saucepan, bring 1 cup of water to a boil
Add 1/3 cup steel cut oats
Boil for 1 – 2 minutes. Remove from heat. Cover and let sit overnight on the stove top or counter, at least 8 hours.
In the morning, uncover and place saucepan over medium heat, bring to a simmer for a couple of minutes.
Add your favourite toppings. When adding spices cinnamon is always a great go to. If you are feeling adventurous try cardamon or cloves or nutmeg. I also like to top with nut milk. Enjoy!
